Carpetbagger Steak

Just prior to last Australia Day, I was pondering what I might cook in celebration. Something that could go on the barbie and had a uniquely Aussie tang. Prawns are always good, especially cooked in the shell, which lends a smoky, concentrated, seafood flavour. The ubiqitious lamb chops were another contender, but we eat them […]

Cedar Planked Salmon

I’ve done cedar planked scallops before on Get Your Grill On, but I wanted to add this, too. Why add salmon to the mix? There are a couple of reasons:

It’s very good
It’s very easy
Did I mention it’s very easy? And very good?

I was actually at a restaurant today in Cincinnati called Palomino’s, […]

Prawns As Big As Your Head!

Ok, maybe not that big, but each one was more than a quarter pound! That’s a lot o’ prawn! My wife and I found these at Jungle Jim’s in Fairfield, Ohio, and I couldn’t pass them up.

I wanted to do something a little different with these than just boil them and dip them […]

Roasted Clams

Although we don’t do it too often, I’m a big fan of roasting shellfish on the grill.  Recently, for a birthday celebration, I turned to a new cookbook and went with Roasted Clams.  The recipe could not be simpler and in a short time, we were enjoying delicious buttery morsels along with the rest of […]

Cedar Planked Scallops

I like to grill things that show off the flavors of the food, not just the flavors of the rubs and sauces. Really good ingredients don’t always need to be covered up with added flavors; they do better with just enhancing with spice.
A great example of this is cedar planking. I’ve had cedar […]

Cajun Shrimp

While this doesn’t pass muster as grilling or barbeque, I made similar shrimp dishes over a campfire many times. Enjoy!

5 lb. salad shrimp (31-35)
1 tsp. cayenne
3 tsp. black pepper
2 tsp. salt
1 tsp. red chile pepper flakes
2 tsp. thyme
2 tsp. rosemary
1/2 tsp. oregano
¾ cup butter
6 tsp. garlic, minced
4 tsp. worcestershire sauce
2 cups favorite wine

In large cast […]

Salmon Beurre Blanc

Entered this at a BBQ contest in Burlington, Kansas and placed 3rd out of thirty teams. I got the idea from Good Eats. The capers and lemon zest were add ons to Alton Brown’s recipe. The sauce was made on a Weber Kettle grill in a sauce pan. I’ve never made […]

Grilled Sea Scallops Wrapped in Proscuitto

Father’s Day was this past weekend and we decided to splurge a little bit. Costco had wild sea scallops available for $9.99 a lb and my daughter and I bought some for me to cook for my special dinner. What? You cooked your own meal on Father’s Day? Yup, I sure did. It was one […]

Cigar Dinner

One of my favorite BBQ contests of the year is the BarBeQlossal held during the 2007 World Pork Expo in Des Moines, IA. This is our fourth year of competing and it gets better every time.
Day 1 starts on Thursday. The big event for Thursday is a high end, five course cigar dinner for six […]
