Smoked Veal Roast

I’ve heard this complaint from other competitive BBQ’rs. Sometimes you start only worrying about the 4 competition meats: chicken, ribs, brisket and pork shoulder. You stop cooking other meats and forget about the spontaneity and creativity that made you enjoy live fire cooking in the first place.
In the butcher case yesterday, I looked over all […]

Video Killed the TV Chef

Now this really has nothing to do with live fire cooking, but either pretty cool or a sad commentary on how the chef has become a celebrity in his own right. Right?
Mario Batali and his son, Benno, make an appearance in a new music video. The new video is from the Bloodsugars, and is called […]

Rosemary, Sweet Rosemary

This comes to us from the Irish Medial Times…
BBQ’s new secret ingredient
Barbeque season looms, and with or without the appropriate weather, there’s a new ingredient that should grace the grill of every meat-eater with even the remotest interest in health: rosemary.
Family doctors may soon be giving cooking tips, if research appearing in one journal passes […]

Kentucky Burgoo

With the Kentucky Derby this weekend,  I thought I’d introduce you to Kentucky Burgoo. So here’s a link to a story about Burgoo.
What’s Burgoo you say? Well it’s “the 150-year-old burgoo tradition in her hometown of Owensboro, Ky. There, men gather all night to grill on an epic level — mutton, chicken and a cut […]

Well, the National Barbecue Association is […]

Fire safety is very important to all of us here at Get Your Grill On. Remember always, that just because you’re comfortable around live fire; fire can still be a destructive and dangerous force. Stay alert and be safe out there.
With the live fire cooking coming in earnest to us here in the Northern […]

Charcoal and the Model T

Henry Ford was a damn good entrepreneur. One of the by-products of making Model Ts was a lot of scrap wood. Now good ol’ Henry said to himself - how can I make a dollar out of that scrap wood? How about making charcoal? Yeah - that’s it - charcoal. And that’s how Kingsford Charcoal […]

A Contest: “He Said Beer, She Said Wine”

I’ve just come across a great book on wine and beer called “He Said Beer, She Said Wine” by Dogfish Head brewery founder Sam Calagione and renowned sommelier Marnie Old and published by DK Publishing just this month.
I loved this book. Finally a book about wine and beer for the rest of us.
Beer is traditionally […]

Robert Fernandez

I am a fire obsessed guy, living in Brooklyn, New York, with a dream of producing award winning, competition busting, real barbeque. I've been playing with fire since I was a little kid living in the wilds of Long Island. I mastered the technique of campfire building when I was in the Boy Scouts. I loved cooking over the open fire and using strange contraptions like Dutch ovens and cast iron skillets. As I grew older I discovered the worlds of grilling and barbecue. It's become my obsession. There's nothing as relaxing to me as sitting and watching a fire. I take my babecue and grilling seriously. I'm a BBQ judge certified by the Kansas City Barbecue Society. I compete on the KCBS barbeque circuit with my team The BBQ-Brethren/Brothers in Smoke. I'm a member of the New England Barbecue Society. I've organized grilling contests, barbecue cooking classes and community bbq's in New York City. I also maintain a blog about my adventures in cooking called WhiteTrash BBQ.
