There is a special place in my heart for pork fat. Here's a new book that gets right too it:
http://www.amazon.com/Fat-Appreciation-Misunderstood-Ingredient-Recipes/dp/1580089356/ref=sr_1_1?ie=UTF8&s=books&qid=1206736896&sr=8-1
Can't wait until it comes out!

Yet pork fat, properly prepared (cured) is supposed to be quite a delicacy. I mean pure fat, not very fat bacon.

I personally haven't tired this, yet.

My Cardiologist has hysterics enough that I cure my own bacon, ham and sausage. Plus the real reason is that I haven't found it yet.

What they actually mean is that fat is a flavour delivery system. The fat easily makes its way about your mouth and brings with it all the spicy goodness of your food.
