Dr. BBQ’s Top 10 Tailgating Tips
Those in the BBQ world are no stranger to Dr. BBQ. He is a world champion barbecue master that has spent the last 25 years in competitions, classes and sharing his tricks of the trade. He is also the Executive Chef at Southern Hospitality, Justin Timberlake’s semi-new restaurant in New York City.
In a recent issue of People magazine, Dr. BBQ (aka Ray Lampe) shared his Top 10 Tailgating Tips.
Top 10 Tailgating Tips
1. Be organized: Feeding a large group is a big job and you’ll need a good plan.
2. Remember the designated drivers: Make a special cocktail, but be sure to include soft drinks too.
3. Nothing too spicy or exotic: Make dishes everyone will like.
4. Get the appetizers out early: Then you’ll be able to prepare the main course in peace.
5. Serve no-fumble food: Avoid anything that guests will need a knife to cut.
6. Don’t forget the matches: Or any of the simple things you can’t cook without.
7. Include fruit and veggies: Some people really like that stuff.
8. Use paper plates, aluminum foil pans, paper towels and disposable wipes: Then toss it all in the garbage for easy clean-up.
9. Have something to serve after the game: They’ll be hungry again, but keep it simple. Small hoagies are a good idea.
10. Serve dessert first: Have some cookies or brownies out early for guests who love their sweets.
