Grilling Tips from The Next Iron Chef Contestant, John Besh


john_bio.jpgAlthough Food Network’s The Next Iron Chef competition is over, the contestants that competed are never far from our minds. John Besh did an outstanding job in the competition, coming in second place to the winner, Michael Symon. In a recent issue of Quick and Simple magazine, the executive chef shared a quick tip for making the most of your grilling meat:

“Before grilling, submerge chicken, pork or turkey for 30 minutes in a simple brine solution of 1/2 cup sugar, 1/4 cup salt, 1/2 teaspoon each garlic and onion powders, 1 teaspoon red pepper flakes and 2 quarts water. This keeps the meat moist and flavorful.” - John Besh, executive chef of Restaurant August, Besh Steakhouse, Luke and La Provence in New Orleans, Louisiana
