A couple of things I'd change. One, like you said some fire roasted peppers. They'd be a definite improvement over the canned. Two, maybe some grilled chicken instead. Three, cut the broth by a least a cup. This stuff was almost a bean soup. And lastly - fresh herbs! Try it. A couple of things I’d change.

Uh, the lack of depth could have been the canned peppers. I wouldn't think they'd lend anything to the stew. Fire roasted poblanos would have for sure.
