Coals: How Hot Is Too Hot?

coals.jpgIs there a science to figuring out if your coals are the right temperature for the grilling you’re about to embark upon? Sure is, or so say the folks at Family Circle magazine. They suggest you hold your hand, palm side down, over the coals, about 6 inches away, and count until the heat makes you move your hand.

1. Hot = 2 seconds (coals glow, with little ash)

2. Medium = 4 seconds (coals nearly covered with ash)

3. Low = 5 seconds (coals totally white, no glow)

Now to just commit it to memory.
