Grilled Basil Haddock


  • 2 lb. Haddock fillets cut into 4-5 oz portions
  • 1 1/2 cups fresh lime juice
  • 1 small onion, minced
  • 2 15oz cans diced tomatoes, undrained
  • 1 Tbsp basil, dried
  • 1/2 cup Dry white wine

Place fish in shallow dish, skin side down.

Combine lime juice, onion, tomatoes and basil.

Pour mixture on top of fish.

Marinate in fridge for at least 45 minutes no more than 1 1/2 hours.

Grill over Medium Heat for 5 - 8 minutes, turning gently until fish turns from transparant to white. Drizzle white wine over fish as it’s grilling.

Remove from grill and serve over Rice Pilaf or Long Grain and Brown Rice with a bit of fresh Parsley and slice of lemon. This dish goes well with grilled veggies such as squash, peppers and onions.

Basil is one of my favourite herbs. I like to try at least one recipe with Basil a week. My favourite recipe of all times is pesto with chicken. I will try the Basil Haddockrecipe as well.
