I keep seeing the references to Boston Butt. My butcher here in the UK just looks funnily at me when I ask for it, does anyone know of the UK name for this cut?

Mike,
The Boston Butt is the top half of the front leg of the pig. In the US, it’s just above the picnic. It could be called the shoulder, or the epaulie (french) or the espadilla (spanish).
It is always sold skinless and can come with or without the bone.
I hope this helps.
Robert
Anyone know why they call it the “Boston” Butt?
yo cross the pond ers: boston butt is called what it is because they(Bostonians) used to pack it in barrels(butts) to ship it to other parts of the country(us of the a, duh). yo where you at?
Uh, huh. But what’s the inside look like? Eh? I wanna see!
