I keep seeing the references to Boston Butt. My butcher here in the UK just looks funnily at me when I ask for it, does anyone know of the UK name for this cut?

Mike,
The Boston Butt is the top half of the front leg of the pig. In the US, it’s just above the picnic. It could be called the shoulder, or the epaulie (french) or the espadilla (spanish).

It is always sold skinless and can come with or without the bone.
