Rub of the week #8 - Jamaican Jerk Rub


With Superbowl parties around the corner, here is a rub that will help all that beer go down even quicker… Buffalo wings have nothing on a great Jamaican Jerk wing! This rub will get you there. You can make them HOT – or just spicy. Either way, nothing goes better with beer and football. This is great on whole chickens also…

Rub #8 – Jamaican Jerk Rub

  • 6 TBS Onion Powder
  • 6 TBS Onion Flakes
  • 2 TBS Ground Allspice
  • 2 TBS Freshly Ground black pepper
  • 2 TBS Cayenne pepper
  • 2 TBS Turbinado Sugar
  • 4½ tsp Thyme
  • 4½ tsp Cinnamon (ground)
  • 2 tsp Garlic Powder
  • 1½ tsp Nutmeg (freshly ground)
  • ¼ tsp Ground Habanero chile

Instructions:

Combine all ingredients and stir to mix.  Pay special attention to not touch the Habanero with your bare hands.  For less heat, replace the Ground Habanero with ½ tsp chipotle powder.

Application: Sprinkle rub liberally on the pieces of chicken, allow to marinate 4 hours under refrigeration.
